Made with the same recipe since 3 generations, the one of my grandfather Victor Lapalus, our Beaujolais sausages are handcrafted. This calf ruffle recipe is specific to our regions, the Beaujolais and Lyonnais styles.
The sausage Andouillette Beaujolaise pulled with the Braillon string, in a totally traditional way, this method of embossing can only be done manually.
We mainly use raw materials of French origin, as well as fresh ingredients. Our choice was to remain a small company in order to be able to continue our artisanal production and to satisfy customers looking for high-quality products that distinguish from those currently offered in many shops.
